If you are taking the canal trail from the Tonawandas to Lockport, Uncle G's is ON the trail. A recently-completed section is paved all the way into Lockport.

This place is awesome! Plenty of vegan flavors too. They are right on the trail and have food and lots of excellent ice cream. Also gave a pup cup with vanilla ice cream to or dog.
