We’re planning a trip on the Erie Canal bike path between Camillus and East Syracuse and would like to avoid any on-road sections. Does anyone know where those spots are? Thanks.

Try the interactive map: click on syracus and zoom out.

Didn't look like there sere anything else other than roads... probably mostly empty rural roads.

Looks like there may be off-road trails. Check the map.

From Erie Canal Park and eastward, it looks like the path may be almost entirely along a dedicated path and not on roads. Zoom in.

The section in Downtown Syracuse along Water Street is really the only section that is 100% on-street. The section along Erie Boulevard is off-road in that there is a dedicated trail in the median. It's an interesting ride through this urban environment.
